sweet potato advice

can anyone help me with this spud? after hearing all the health raves it has received, i'm eager to begin incorporating sweet potatoes in our fall collection. i think i'll be fine with sweet potato fries or roasting them, but many questions have arisen in my mind regarding mashing them. every recipe i see has so much sugar/syrup/butter in it. no thanks! there goes my nutritional value. i'm fine adding cinnamon and other spices, a little sugar or butter, but would rather not make it a fat/sugar bomb. does anyone have a favorite mashed sweet potato recipe?

I love sweet potatoes and just treat them the same as a regular potato. If I bake them then I add a little butter, salt, and pepper. The bake in less time too. If I mash them, I just add milk, and butter, salt, and pepper just like I would regular potatoes. The cinnamon and sugar are added just to make the sweeter, but no need. Eat them like you would a russet. Enjoy!

OH Aimee! You have happened upon anothe one of my loves...we must discuss. I have a few collections of sweet potato recipes. My family loves them and it makes me smile for their nutritional value. Our favorite way is just poke w forks, bake for about 45-55 minutes, split open and enjoy! i never put butter or salt on mine, maybe some pepper, and its delicious and sweet.

I also have some fancy recipes like, chipotle butter s.p.'s, cinnamon and honey, etc. Oh, and of course the requested thanksgiving heart-stopping brown sugar, butter and marshmallow s.p.'s!! yum...

I love sweet potatoes, and my favorite way to make them is simple. Wrap in foil and bake them. Just like a baked potatoe. Make sure you put something under them, however, because they ooze sweet goodness that burns in your oven. Once they are all soft, they are perfect for eating. I just scoop them right out of the skin, or mash them up in a bowl, no need to add anything. They are delicious as is. Of course, you could add a little b. sugar, or applesauce if you want.

i would go the savory route with mashing. do you have a flavored olive oil? some salt, Parm, pepper. i think the oil would add richness.

Dad and I just bake them, like the other posts. I do them in our microwave, but since you are lacking one the oven is great. We do the salt/pepper/butter route. Enjoy!
